The commercial value of milk depends on raw material quality, effective processing controls, product consistency, food safety and reliable delivery. Processing can help dairy enterprises diversify revenue, extend product shelf life and reach markets beyond the farm gate. This programme examines milk reception and testing, heat treatment, separation, standardisation, yoghurt formulation and fermentation, packaging, cold- chain management, quality systems and processing economics.
Turning raw milk into safe, consistent and marketable dairy products requires disciplined control from milk reception through processing, packaging and distribution. Milk and yoghurt production also present opportunities for value addition, but only when product quality, food safety, process efficiency and unit economics are managed together. This programme examines the technical and commercial controls that support reliable dairy processing and responsible product development.
Upon completion of this programme participants will be able to:
This programme is intended for:
Delivery combines expert-led sessions, case studies, guided exercises, group problem-solving, practical simulations at the end of every module, action planning and a guided dairy farm visit. The visit is used to observe relevant practices and connect course concepts to an operating environment. For this programme, the visit emphasis should be adapted to the course focus. For this processing-focused programme, an additional visit to a milk collection centre or dairy processing facility is recommended where available. All demonstrations and product-handling activities must follow approved food-safety controls. Farm and facility visits are subject to availability, travel arrangements, host approval, occupational safety requirements and biosecurity protocols. Visits are observational unless practical activities have been expressly approved and supervised. Processing demonstrations must comply with applicable food-safety controls.
Upon applying the knowledge and skills gained from this programme, organisations will be better positioned to:
Upon completing this programme, participants will be better equipped to:
Simulation: Participants assess a fictional milk intake report, determine which consignments require acceptance, further testing, segregation or rejection, and document supplier feedback. They also develop a process flow diagram for a small dairy plant and respond to a simulated temperature-control deviation.
Simulation: Teams develop a yoghurt product specification and batch record, diagnose a simulated defect such as excessive syneresis or inconsistent acidity, and propose controlled corrective actions. Product handling and tasting must follow approved food-safety procedures.
Simulation: Participants complete a hazard analysis for a milk or yoghurt processing line, identify critical control considerations, and draft a corrective-action and traceability response.
Simulation: Participants investigate a mock customer complaint involving temperature abuse and damaged packaging, trace the affected batch, assess product disposition and recommend containment and communication measures.
Simulation: Participants compare the unit economics of fresh milk and yoghurt product lines, calculate indicative contribution margins and recommend feasible improvements in processing efficiency, waste reduction and profitability.
At Strategic Revenue Africa, our certification goes beyond proof of attendance—it represents practical competence and measurable capability. Upon successful completion of our training programs, participants are awarded a Certificate of Completion from Strategic Revenue Africa, recognizing their ability to apply acquired knowledge in real-world settings. As an organization focused on architecting sustainable revenue and strengthening organizational performance, our certifications signal that participants are equipped with skills that drive results, not just theory.
Participants should have a basic understanding of dairy production, milk handling, food hygiene or food processing principles. Previous experience in dairy processing, laboratory work, quality assurance or food production is beneficial but not mandatory. Basic numeracy skills and an interest in milk processing and quality control are recommended.
